Canning and Home preserving

Oregano and thyme do fine here, and also some mints. Basil and rosemary need to be inside, or new every year. Some sages are fine too, but not all.

I managed to get my oregano to grow inside but after a few months it gave up. I think it didn't like the lighting. Maybe it grows better outside?

I would think your herbs wouldnt do well in frost. Most herbs can be grown inside and some are finicky. Basil and mint are really easy to grow. I've had trouble with oregano, rosemary and thyme though. We grow out mint outside and it comes back every year. The basil dies from the frost though.
when I moved in here I had a rosemary bush outside the back door. Been there a while.... Remember I am in the desert. We do get cold days and nights and some snow.

But we have a very long growing season if you have water.

Here are the herbs for zone 8b
https://thegrowers-exchange.com/collections/herbs-for-zone-8
Rosemary
Sage grows wild
Thyme
Mint
dill
basil
cilantro
Tarragon
lavender
bay leaves- Bay Laurel is native to coastal California but at around 5000 feet. Dont know if it will grow at 3000. But we have lots of pine trees that arent native to this elevation... We will see.

There are a few herbs that I want to explore that are on the list but later...

they dont have Mexican Oregano but you can grow it from seed and it loves this climate. Its also Called Rosemary Mint. I may have to go to a local grower...

I dont particularly like Oregano... but I want to try this Mexican version. Its not in the oregano family but it has similar uses...

As I opened a can of Campbell's tomato soup last night, I realized I really need to figure out a copy-cat recipe for that stuff. For some reason I just love that junk, and if I could make my own it would be so much better. What is really weird is that I am not much of a fan of tomatoes - I have been forcing myself to eat raw tomatoes, but I just don't like them.
