OK on the Canning front. I decided about two months ago to go ahead and buy an All American pressure canner. I Could tell right away my little Presto sixteen quart wasnt going to be big enough for the projects at home. Except for small batches.
At first I searched for the larger 23 quart Presto because they are less expensive. By now All the canning supplies on line are severely decimated. And What was there came back at almost a Gouging price. One of the last things I bought off was Ball Canning lids. Shipment was delayed almost a month.
The shipment finally came but it was marked as from the Webstaruant store. I had to back track to figure out that they did in fact come from
Amazon. Ball followed through with something they ran out of and committed to located a source and sent them to me. They are a class act.
So... While in a panic I bought a Stainless Waterbath canner on Webstaruant. As well as Canning Jars. I ordered some more stainless rack parts through there as well. Their shipping is always reasonable.
The Electric Ball Waterbath canner I wanted was available through Ball. Price was higher Than
Amazon but shipping was free. I hate to buy on job electric appliances. So this one is awesome. A multi-tasker. Water bath canner and multi cooker. You can make stews and broths with this. For broth you can use the drain spigot to drain the broth right through a strainer and into a jar if you want. The spigot allows you to drain the water bath into the sink. Very little lifting required.
I also bought an All American Canner through All American website. They are back ordered till October but The price was inline with the ones I found on
Amazon. before they disappeared. 25 quart I want to be able to double stack. I double checked
amazon to see if they were back.... They came back on at a WHOPPING 500+ price. So I went back to All American and made my purchase. (They wont Charge me till its ready to ship)
The All American Canner will have to reside either on the stove or on the counter top till I can design a transfer cart for it. Just something to store it when not in use.
Once up at the house and the pantry installed I am first tackling the big canning projects. I may not wait for the pantry Or the All American... I have lots of bone broth to make That will go in the freezer or get canned for Cooking stock.
Freezer bags layed flat on a cookie sheet filled with liquid once frozen can be stored like books. Very space economic.
Got some more recipes off Youtube. Cant share right now but will once we get back from the house.
