Canning Deer Meat

My DH cuts his raw venison into chunks, mixes with a little BBQ sauce and pressure cans. It becomes the most delicious, tender, spreadable on a cracker or eat it straight out of the jar goodness. He's done a similar version with salmon with incredible results.
 
This is your lucky day!I have a recipe that I've used for years and it can't be beat. Add enough water to Lipton's dry onion and mushroom soup mix to make a paste. 1/4 up an onion. Put a dollop of soup mix on the bottom of a pint jar, a chunk of onion. then half full of venison, then more onion, and then fill to a half an inch of the top with venison. Take a wooden or plastic spoon and use the handle to remove any air pockets in the jars. Pack tightly! Do not use a metal spoon! It's highly recomended to pressure can any meat. Follow the meat canning instructions to the letter. You don't want to get sick or die and besides that would waste the meat. Now the most important and final steps. Turn on a football game, warm up the meat, put out some saltines, a fork, and a beer. This recipe goes very well with beer. But now that I think of it most things do!
