The chicks I raised don't run from me, except the crazy leghorns. The leghorns I don't usually grab, I just kind of herd them where I need them to go. The rest will come to me if I call them. Some are still a bit skittish (Silkie) so I distract them with food so I can grab them.
The older ones that I bought as adults... I usually slowly walk and get one in the corner of the run, then it is pretty easy to grab if you are quick and not afraid of flapping wings. The guinea is the one that gives us the most problems... she can fly better than the rest and HATES HATES HATES us. And if you do manage to grab her, she makes your eardrums bleed with her screeches!
