Cheese Stuffed Heirloom Cherry Tomatoes

Recipe -
Cut off top and remove seeds from 18+ cherry tomatoes. Heirloom are your most flavorful choice. Set aside.
Then mix in a bowl 1/2 cup shredded mozerella
1/4-1/2 cup bread crumbs - Start with 1/4 and add as you go so all the cheese is lightly coated
2+ tbsp olive oil (enough so everything sticks and blends well)
a handful of fresh chopped basil, salt and pepper.

Stuff tomatoes and bake at 400 degrees for 10-15 minutes. Eat hot, OR cold as a side or appetizer.

ANy cheese will work, but its the bread crumbs and oil that make it all brown and crisp on top... while the cheese inside is gooey!
 
Oh My!!! I see this in my immediate future. We have the most lovely yellow cherry tomatoes....bet they'll be perfect.

What a nice pic. They look so yummy!
 
I was lucky enough to have a ton of my Chocolate Cherry Tomatoes ready. They are thick and work well for cooking. They are also VERY flavorful. I am going to save seed and grow these again, next year for SURE!
