Chia Pudding (yes, as in cha cha cha chia)

Anyone else addicted? I just found out about it at a local restaraunt that a very nice and creative couple just opened up, and then my husband made some tonight that was amazing! Lots of different flavors (chocolate for me please) and ingredients, but often the recipes are vegan. No cooking required. The seeds expand and turn whatever liquid you set them in into a creamy, pudding or mousse like consistency. Heavenly! And healthy as all get out. Ground seeds leave a smooth texture, whole seeds are more like tapioca.

Hmm......never heard of it as pudding. Although, I thought that I just heard of it in another dish -- can't remember what, of course! I'd try some!
 
We use chia as egg replacer in recipes sometimes. It's super healthy and is a great binding agent. 1 Tbsp of chia and 3 Tbsp of water, mix together, let sit for 10 or so minutes and voila.
 
Does anybody have a good source for chia seeds. We bought 25lbs for $90 last year (from Bob's red mill). They do not have any in bulk right now and the best we are finding on line is $200 for 25lbs. More than double plus shipping.
