Chicken and rice..need help finding an old recipe

My husband's grandmother from Russia made this:

Brown chicken pieces in big pot with salt pork or small pieces of bacon, along with a cut up onion. When brown, turn to very low and add a cup or two of long grain rice. Add some dill. Cover and cook on low for 45 minutes to an hour. The chicken and rice get nice and crispy. I like to de-bone the chicken when done. Add salt and pepper to taste.

Simple old russian food.

My MIL from below Charleston, SC taught me how to make Chicken Purlough. Take a whole chicken in stock pot covered with water. Add salt, pepper (and I add couple of shakes of Poultry seasoning) Cook til falling off bone. Remove from water and debone. Return to water and add rice(2cups water =1cup rice)Simmer on low til done. If chicken doesn't have much fat, may add a little bacon grease.

I also bake chicken breasts in oven w/rice. Use 9x14 pan Preheat to 350. Put 2 cups water, 1cup rice in pan and spread evenly.Place 4 breasts on top this. Sprinke all with salt pepper and poultry seasoning. Bake 30 min and turn over,sprinkle that side with seasonings. Stir rice and bake additional 30 min.
 
Supper easy and yummy:

one chicken or parts would work
about 1 cup of rice
1 can cream of mushroom soup
full soup can of milk
one hour to bake at 350 degrees


put rice in bottom of covered baking dish with high sides like a corningware casserole dish

place chicken whole or in parts on rice bed

glob soup on top of chicken

pour milk over whole concoction

bake at 350 degrees for about 1 hour or until done

Havi, I cook chicken in salted, seasoned water til done then remove and let it cool. I add white rice usually long grain, bring to a boil, turn to low and cook another 15 minutes adding the chicken back in at the end of the cooking time and cooking until rice is tender. Careful that you only use a little more water for the chicken than the directions recommend for cooking the rice.

Now to try to get it like your step mom's: Did she have any vegetables in it such as celery, onion, carrots? If so add them with the chicken. Did she have any seasoning or herbs? thyme, garlic, rosemary, pepper, poultry seasoning are possibilities. Play around with those, I'd start with a little garlic powder and maybe a sprinkle of thyme because they are good with chicken without over powering it. Did it have a creamy sauce? If so cream of chicken soup can be added....if it had mushroom pieces add mushroom soup instead. I would add the soup and 1/2 that much milk. and let it cook til absorbed. Did it taste cheesy? Add some velveeta or grated cheese of your choice and a little milk, stir until melted.

I hope that you can use this information to figure out how she made it or better yet come up with your own favorite recipe. Happy cooking.
 
Thanks for all the great recipes. Ive passed a few of them on to friends. Like I said Im not a fan of anything creamed. No cream of chicken, cream of mushroom, nothing! Anything creamy and Im outta there. I did like the ones with the veggies added though. I am gonna have to try those. That is not what my stepmother used, but it sounds great none the less. That I can remember the only thing she had was the rice, chicken and then some salt and pepper. I dont remember her adding anything else, but Im not 100% on that. She may have.

All I remember is she would boil the chicken and then tearing the meat apart once cooked. Like I said she mainly used breast, but would also use a leg or two. When the chicken was done she would tear the meat off the bone into little chunks. Then from there I dont really know.

Again thanks for all the great recipes and ideas. I will note all this and try to cook it this weekend. See how it turns out. Thanks everyone.
