A book called "Genetics of the Fowl" by F.B. Hutt, published in 1949, contains a large amount of information (later research found that he was wrong about a few things, but large amounts of it is still considered to be correct.)

As a general rule, black is rather dominant, however it is important to note that black needs to be homozygous with a melanizer in order to express as a solid black bird. Otherwise, you get some leakage (red, gold, yellow, or silver on an otherwise black bird.)
