I lived in Ecuador for several years. One Sunday, I wasn't feeling well and was left at home with instructions to occasionally stir the soup simmering on the stove.

I did as I was told. I eventually stirred up the feet and heads of several chickens that had gone into the soup. Not my idea of fun, but you have to admire people who waste nothing!
 
Its not just about waste....lots of those parts can make a good broth even if you strain the parts out before eating the soup.

We in the US tend to have a very repressed way about sanitizing our food by hiding all the parts which clue us in to the fact that we are eating other animals. This is generational as well. If you talk to your grandmothers or great grandmothers, most of them cook with lots of parts that we dont generally use today including heads, feet, brains, etc.

The Super KMart here sold chicken's feet.

They were good for pranks, not that I would have first-hand experience with that, no, not me, I wouldn't do anything like that.

That is exactly the reason I don't eat hot dogs except kosher ones (and those only rarely). I have never had bologna in my life.
