The 8' panels are a very practical thing to go with, as you said you can always add to it.
I have my run build with one roll of 1"x2" welded wire it comes in 100' roll and it is quite expensive about $260.00, but the good thing about it that it is really bullet proof against all kind of preditors (it is so tough that you need a cutter to cut it) I am sure that you guys are going to use 4x4 treated lumber for the posts ( that what I did use) the advise I can give you is : 1- use concrete when you set the posts and if you like to cover the roof, ( find a local metal sheets corigatet panels manifacturer and try to buy the pre ordered supply they had or what customers did not pick up that way you can save a lot of $$$$ I bought 40 sheets last year 7' tall for $250 compare that to $700 if I orderd them, the disatvantage of that is you can't pick the colors, and you might have to do some cutting and sawing when you install them, but it is still very good deal. 3- make sure that the door of the run is big enough for wheelborrow and such things.
