Well, we had 16 cornish rock crosses, and though I had planned on processing them myself, after I did the first one this past weekend, I've decided to find someone else to do it.
Although all went generally smoothly after the death, when I tried to break its neck with a broomstick over its neck while I pulled up on the shanks, his head sort of slipped off. I guess I pulled too hard in my nervousness! Anyway, no more of that now.
I've called many many feedstores and meat packing plants, but the closest I could find was a 2 hours drive to Houston.
Can anyone recommend someone? Or, a better way to find someone?
