I will alert my husband to this as we are building a coop now for our girls. I hope they catch the people who did this. These arent just chickens, they are family.
It's awful and crazy how low people will stoop to make a quick buck. I'm in northern Westchester so this news is extra disturbing. A dog or other noisy guard animal, a game cam, some padlocks, and trolling Craigslist are all excellent suggestions. It would take great self-restraint for me not to land-mine my property if this happened to me!
Another suggestion is maybe put up fliers at the various feed stores in the area? TSC in Patterson, Highland, Amenia? Other places? Even if it doesn't bring your chickens back it can help spread the word that this kind of nonsense is afoot.

I had a good lead thanks to a concerned neighbor in the hudson valley, but our local law enforcers could not spare the time to follow up the lead, nor would the live auction house through which my birds may have been sold provide me with the names of the purchasers of the lots that corresponded to (possibly) my gals.
I have a nice new flock now, with two useless guard geese and two mallards to add to the cacophony. No new instances of chicken thievery, but slightly elevated security in the area.
