There is another definition of a chicken 'saddle'. It is the 2 small choice pieces of white meat on each side of the back.
It is the ONLY portion of the chicken that the Duke & Duchess of Windsor would deign to eat. Not sure how many chickens would be required to provide them a meal.
I recently had an experience with Publix when I purchased 2 fryer chickens and upon getting them home, I discovered that the 'saddles' had been removed from both chickens.
I thought that was about as petty as one could be in terms of cheating the customer.
I hope this might be of interest to some of your readers.
