Chicken with Pineapple and Broccoli - with photos

I took my 2nd chicken from yesterday , a fresh pineapple chopped, some fresh broccoli, chopped onion and garlic.

Salt and pepper to taste, olive oil to cook with.

Sautee the onions and garlic.

Add the broccoli to steam a bit keeping it crisy and bright green.

A little grating of fresh ginger (which I LOVE).

Add the pineapple.

Add the chicken.

From here you can use soy sauce and cornstarch and make a more asain chicken and pineapple dish. Or you can use pineapple fruit juice and cornstarch and go more hawaiian.

You choose.

Cook a nice pot of basmati rice.

Serve with a side salad of baby spinach, cucumber and tomato.

My dh and 7yo dd ADORE both pineapple and broccoli. I never thought of cooking a dish with both of them together!
