Ceviche is amazing when done right! If you are not near the sea though, don't even bother.

Ceviche, chips and a real margarita on the rocks on a beach in Baja away from the Gringos. Doesn't get any better than that.

I have found that the best fish to make ceviche with is cobia. So yummy and excellent flavor.

Up here we have all sorts of yummy fish, shrimp and mollusks. Of course we don't just have the citrus or avacados growing wild, but with a little help from the grocer, yummy yum yum.
