chickens too old too lay

I haven't had any yet but what do most people do with chickens that are too old too lay eggs.

Chicken and dumplings, pot pie, gumbo or soup.

They'll be too tough to roast but crock pot cooking or near simmering (don't boil or you'll toughen the meat) in a pot to slow cook meat as your making stock then you make just about anything. So much more flavor than young birds and the stock is beyond compare. My favorite is gumbo with kielbasa to which you use both the meat and stock. Make the stock and slow cook the meat day before that way you can skim off the fat from stock.
