I think that @TheDawg may have mentioned it before- getting dogs to settle/relax on command? I think that GSP could benefit from that, and hopefully once we've got her better on a leash, she'll get more walks and a combination of the two will be good for her.

Tether them up so they have no choice but to settle down once they are bored. When they settle, give a click or a "yes" and give a reward.

No, I like this guy. He uses a lot of examples because he usually has the clients in the room and he needs them to understand what he means.
If the examples aren't good, the students don't learn correctly.

And the point still stands that he's not encouraging the behavior that he wants.

"I can chew on this as long as he's holding it." But can the dog disengage? What will happen when you take it way? Can you ask for it back? What happens if the dog gets ahold of it and runs away with it? What is he doing to modify the behavior?

He's not addressing the whole picture, and he's not even addressing the real problem.
