Chorizo - oh, how I love thee!

How many ways can I eat chorizo? I just love love love it! I don't know why it took me so long, but this week it dawned on me to try chorizo and eggs. Couldn't be easier or more satisfying.

- dice a bit of chorizo (say, a cubic inch or so)
- saute it in your favorite egg pan til it starts to brown
- add 2 eggs (scrambled or fried, both deeeelicious)
- cook til you like your eggs done

So good. So fast. Can't wait for breakfast! What do you like to make with chorizo?

I make meatloaf with chorizo, 2 lbs. ground beef, 1 lb. chorizo, a couple of slices of bread (crumbled and soaked in milk), 2 eggs (beaten), and a good healthy handful of french fried onions. Shape in loaf. Cover with tomato paste. Bake uncovered @ 350 for 1.5 hrs. Yum.

Yum! I'll have to give that a try. I also like to make a version of Paella that doesnt take too awfully long to make. I usually prefer to make it with chorizo, chicken thighs and shrimp. Is it dinner time yet??

I like to stuff boneless chicken breasts with some cooked chorizo and sharp cheddar cheese and grill, serve with some salsa, yum!
