Paper towels tend to absorb moisture so remove those, just keep the sponge in the jar of water, make sure the sponge is big enough to stick out of the jar with water still in the jar.

Oh... that makes sense! I tried putting the paper towel trailing out of the jar and it wicked the water right out of the jar and puddled in the incubator, thankfully I caught it before it reached the eggs.

I keep thinking I hear a peep from the eggs, it's really quiet and muffled, but I think I've determined it's a squeaky spot on the floor where I'm standing next to the incubator it keeps getting me though!

Just make sure the kids don't hold them too tight. Huge benefit, unlike most other living being, dropping these guys isn't a worry. They fly extremely well. Once dropped a pullet a meter and a half high, caught herself at the one meter mark, and then flew upwards two more meters
