Ciabatta bread - this one worked out really well, fast and easy

I have this thing where I brush my bread with an egg white wash. One egg white, 1 tbsp warm water and a pinch of baking soda... makes the loaves all nice and brown.

Should I do that with these?​

I use alot of different Glaze washes on my breads but never had any luck with using them on these wet dough's though, they tend to fall when brushed because they are so fragile.

I am NOT getting any pancake like batter... I've done 2 batches of the dough, and its THICK and STICKY and almost the consistancy of my biscotti batter. What am I doing wrong? I followed the measurements to a T!?
 
That is Ok, and it will get really soft and plyable but fragile as it rises. Pancake batter consistancy is not the best desription.

Ok, well it is in the middle of its 20 minutes dough hook beat down. Looks like I'm going to have a good 2 batches then. Must being going to share with the neighbors! LOL
 
OK I have the batter part done, and rising so I'll put up the pictures of that.

I decided to do a half multigrain today to see how that worked, so 2 cups each of these flours.

How it climbs the paddle, time to change to the hook.

How it gathers on the hook after 5 to 10 more minutes (for this mix of flour, I think the white was faster) from here you beat for 5 minutes more.

In the oiled bowl, turned so oil is on top as well, and in the warmed oven for first rise.

OP ........ That's what I envisioned it to look like....... Can I just turn them onto a baking stone instead of parchment paper ??.
