Classic Campbelles Eggs

    Sounds like a good way to use up some extra eggs! [​IMG]

    1 can (10 3/4 oz) Campbells Condensed Cheddar Cheese Soup
    8 eggs beaten
    Dash pepper
    2 tablespoons margarine or butter

    1: In a medium bowl mix soup, eggs and pepper.
    2: In a medium skillet over low heat, heat margarine.
    Add egg mixture. As eggs begin to set, stir lightly so uncoooked egg mixture flows to bottom. Cook until set but still moist.

    Serve with toast, sausage, bacon,ham... whatever!

    Sounds kinda like a Welsh rarebit dish to me? Good over toast points, but really good over toast topped with tomato slices and strips of bacon, run under a broiler until bubbly and browned!
