Two good answers here. If you cannot see the dot or bull's eye when you crack the egg, try turning it over gently with a spoon. Sometimes it is on the bottom.

The color of the yolk depends on what the birds eat.
Freeranging birds usually have dark orangey yellow yolks.
Birds that are penned and only eat layer food usually have pale yolks.
Mine have a medium orangey yellow color, they are penned to keep breeds separate, but they get lots of greens, BOSS, mealworms, and other treats.
