Maybe you could make a regular pot and a decaf pot and start decreasing your caffeine and add some decaf for a week then add more decaf for a week etc.
I almost always stick with cold brew coffee. Less indigestion that way. I'm thinking of trying Java house decaf.

That's a great plan, I know a number of people who drink half regular and half decaf and its good coffee with half the caffeine. BTW Dunkin Decaf still has high caffeine compared to others.
