Tonight is eggplant parmigiana.

Last night I got adventurous and made tacos. The filling was jack fruit -- a meat alternative -- something I hadn't cooked with before (bought canned at Trader Joe's). It takes on whatever flavoring you're cooking it in and shreds up nicely. Sadly, the taco seasoning was ultra-spicy (more like napalm intensity) so LOTS of sour cream got used. Anyway, DH thought it was pork until he espied the empty can and wanted to know what it was. I'll cook with it again sometime in the future.
 
It's a HUGE thing if you buy it raw. (Kevin Hart has one in checkout in a funny credit card commercial. "I'll take that, and can you tell me what that is?")
Canned is much more manageable.

I’ve seen them here before and they are huge! Like nearly watermelon huge! I’ve seen it canned too, didn’t know what to do with it so glad you mentioned it!
