Cold eggs

Well as you can freeze eggs for storage, I don't think freezing them hurts them, I use them in baking, and I figure 350 degrees kills a lot of bacteria. This time of year, eggs are a bit short in supply, and I bake often.

When you freeze eggs are they in shell? Or cracked into ice cube trays? Do the shells crack or burst? Do you wash them before freezing?
 
When I freeze my eggs for long term storage, I do a dozen at a time, beaten slightly. Try not to get too much air in them. Then I pour into 12 hole muffin pan, and freeze. These I use for baking, two "muffin" equals two eggs. Otherwise I pour into a gallon bag and freeze flat. This I use for scrambled eggs, I have a large family that frequently visits.

In the summer when eggs are plentiful, I try to get a couple of bags put away for the short days of December.

This time of year, if you get a cracked egg, I just put it in the fridge, and make sure it is cooked. Cooking kills bacteria, I don't eat them raw.

I've been feeding the suspect frozen eggs back to the chickens. I let them thaw then cook them up. Shells go back to them too. Some do get cold so I have been putting them in the fridge. I like the idea of leaving them out and eat them first. I just wish there was a way to know for sure when they freeze or have hairline cracks.

That has been a worry for too, not knowing if really cold or frozen
 
It doesn’t matter if cold or frozen as long as not cracked. Just wash and refrigerate for use. It will thaw in fridge. If sit a day will be easier to get out of shell. Also technically if already cold and refrigerated outside, then supposed to be refrigerated inside and will last longer 3-5 weeks. :) If cracked, I scramble and feed to chickens. That does not happen often. :thumbsup
 
Ah, I wish I did know my girl's egg cycle. I am pretty sure only Vanna (one of my Sapphire Gems) is still laying. A pullet, she only started laying within the past month, so some days, she lays early, and some days, she lays late. I know because I bundle up and rush outdoors about every hour (yeah, I don't have to brave the cold and go to a job) and I still don't catch all of her eggs in time.

I am enjoying this discussion immensely. I don't refrigerate eggs and have been hoping they are all safe to eat. I do, however, break each one into a little dish before dumping them into a pan -- just to make sure they don't look too watery. I have been concerned about the possibility of those microscopic cracks I've read about, but I feel reassured now that we will all be okay after cooking them.

Only half my girls have started laying again so I have no idea when they are going to lay. It's been different every day. I check every hour to hour and a half when its cold.
If you are worried about your eggs going rotten while they aren't refrigerated you can test them easily. Fill a bowl, a jar, or a tall glass with water. A bowl works best because you can get the egg out easily without spilling out the water. Place your egg in the bottom of the water. If it floats it has gas in it because it is rotten. If it sinks and stays there it is fresh. If it is standing on end it is still fine, just not fresh. I use those for baking. Breaking them and looking at them won't tell if they are bad. Watery eggs mean they were frozen.
