Color genetic questions on three birds

The rooster does not have the lacing gene or columbian gene. The columbian gene is a pattern inhibitor gene. It prevents all patterning from showing on the chest, only allowing the base (either gold or silver) color to show. Your rooster has what looks like speckling on the chest. Lacing is when the 'pattern' color is edging the feather.

Is there a gene that creates speck long or just leakage? So a standard Americana has what pattern genes if any?

There is a speckle or mottled gene. There is no such breed as Americana. There is a breed called Ameraucana, but they are pretty rare. Most birds sold as Ameraucana are actually Easter Eggers. As to what genes a true Ameraucana has, depends on it's color variety. Easter Eggers are basically mixed breeds with the blue eggshell gene. There is no telling what might be lurking in their genetic background.
If the Orpington was buff, then there are lots of genes that might have been hidden by the buff color.
The black Australorp should have produced 100% solid black chicks, if it was purebred.
