I could use some pointers on cheese. My sour cream is very awesome but my cottage cheese has never worked right for me. I can make mozzarella but it doesn't turn out the best. I have calcium chloride in my fridge just in case. What type of cheeses? If you get a sock loom, I can show you in an hour or so how to do the steps you need for homemade socks.

The hard part of cheese is that you need the right milk, if you can get a hold of goats milk that would work much better. Store bought milk will never give you great results and one of the major dairy's (ie Robinson Dairy) only produces okay results. I was looking for goat's milk for the next time I make it but I don't know anyone who has it. I found these instructions and I plan to use them next time.

You all may want to get in touch with "the goat cheese lady". I met her and her husband on this summer's coop tour. They are super nice. OK, I can see you guys with lots of experience now. A roll of the eye, thinking sheesh another newbie excited over a freakin egg. But I thought I'd share this with my friends here who are still waiting.

I have one pullet who started laying two weeks ago. As far as I can tell she's the only one laying. In 14 days I have gotten 9 eggs. They started out very small, but have been slowly getting larger. My last one might have been considered a medium, but more likely a small. Even on the days when she doesn't lay, my BR still goes into the nest box and spends about half an hour, might be a 'just in case' kind of feeling she gets. She sometimes, but not often gives out with an egg song (I've only heard it 3 times, even tho I'm listening). And the time's I've heard it have been before she goes into the box, not after. And every time I've heard it there has been no egg that day. One of those days was yesterday. She kicked up quite a fuss, singing her song, I went and checked the nest, no egg. As I left the coop, in she comes and makes her way to the nest. She goes in there, spends her half hour then quietly leaves. I check the box again, no egg. I checked at 7:00 that night just in case. Still no egg. Sigh.

So this morning, no song. But I go out about 9:00 am and this is what I found. Egg on the left is the egg from 2 days ago, center is store bought large, egg on right is today's. I think she musta worked extra hard to get this one out.




I watched a couple of videos on you tube that I got links from on an old thread here, closeups of a chicken laying eggs. What was amazing to me was that on one of them the woman doing the video was right there talking and lifting up the feathers to give a better view of the vent. Chicken didn't even seem to notice. And I've been being careful not to go near the coop when she's sitting on the nest. Guess they're not that concerned?
