at this point I'm just trying to grow him out to butcher as I have enough roosters.

You could just dispatch him now. If bullying is the issue, he might get a bit bigger if you can separate him and make sure he gets plenty to eat. But he might not get enough bigger to make it worth your time and effort and the food to do that.

If he actually is sick, you might not want to eat the meat. If he is just being bullied and underfed, he is fine to eat. It might be worth separating him for a bit so you can tell which is the case, if that makes the difference in whether you eat him or not.

I personally wouldn’t butcher him to consume unless you know he’s healthy. He doesn’t look the best. So I’d definitely separate and see like NatJ said if it’s just a bullying issue or if he’s actually unwell.
