I would think you could put some of the whites in there as well. Wouldn't it just tend to make it fluffier?
Or you could make some of that angel food cake to go with the ice cream. Or... when I was on a health kick to make omelets I used three egg whites to one egg yolk to make omelets. Didn't change the taste of the omelet and was much healthier.
Or you could make Meringues (the cookies) Any excess part of eggs I have that I can't use for food I cook up and feed to my dogs or back to the chickens. It's very high protein and good for them.
It's a shame ice cream isn't more popular in early spring when the chickens are laying at full bore! I am selling all of my large eggs this time of year.
Please don't misunderstand however; I like eating much better than I like cooking!!!
Hello! I knew where you were from when I read your zip code. I grew up just south of Salina, and had an aunt, uncle and cousins at Abilene. They had the dairy just east of Abilene on the north side of I-70. Spent many days there when I was younger. The dairy is now run by one of my cousins.

Ivy, I'll have to take a look over at the family dairy next time I get that direction. We lived in Salina for a looong time before moving here.

DH and I have been married for 93 years...oh, no, it's 39 years... Three grown kids, all out on their own, so it's us, and a herd of rescue cats & dogs, 10 hens and a white peacock that has been here for a week or so. We moved here from Salina about 6 years ago, have 4.5 acres of very neglected, abused land that's slowly coming 'round. I'm trying to live the simple life, organic practices, gardening, etc, while building our own house. We're tired a lot and tend to doze off when we sit down.
