cooking deer ribs

Well, my youngest son got his first doe this week. I need ideas on the ribs. Usually we just trim the meat away for grinding but this doe was so fat and meaty, I want to try cooking the ribs in tack..need suggestions??
 
Put them in a smoker/ cooker at 225 degrees for about 3 hours then wrap them in foil with a bit of liquid of somekind not much an cook for another two hours then take them out and cook them one more hour to crisp them a bit. It is what the bbqers call ther 3-2-1 method.

most compeitive cookers use some version of this seaoning is all up to you. You can do them low and slow in your oven as well just not quite as much fun.

Thanks, gonna give it a try tomorrow. They have been soaking in salt/ice since Thursday..so they should be ready tomorrow.
