If OSB has worked for the interior walls of my garage, metal barns and toolshed over the last 15 years there is no reason that it will not hold up as well as plywood for a lower cost.
I have it inside my one garage, too. I use OSB everywhere. It does well in many places, I'm a big fan of OSB.
But it doesn't do well in wet or "organicly rich" areas

OSB is better than it used to be and they have cut down on the formaldehyde ("new house smell"?), but it depends what you want.
Maybe put the lower 2 feet of plywood and OSB above. I would really think hard before using OSB as an uncovered floor or the base of walls in an area rich with organic material and with food producing animals. *IF* you have a problem with the OSB, the contamination can be difficult to remove and could cause real trouble.
Granted, it may take a year or so. Swelling, flaking, or discoloration will be the first signs.
Either way, be smart about is. When painting, use a good primer, let it dry *completely* before the 2nd coat of primer. Let each coat dry extra long, then same with the 2 top coats. You'll save paint that way
