Corn Bread Bake

This recipe was requested by Miss_Jayne along with the attached photo. This recipe is super, duper easy and it is my most requested recipe to bring to family gatherings.

Corn Bread Bake

1 17oz can whole kernnel corn---undrained
1 17oz can creamed corn
2 eggs
1 stick butter or margarine, melted
1 c. (8oz) sour cream
1 box Jiffy corn bread mix

Mix all ingredients together in a lightly buttered 2-3qt casserole dish. Bake at 350 degrees for 30-60 minutes, or until top is golden brown.
(I usually end up having to bake this for 45-60 minutes, but just monitor it the first time you make it to see how it works in your oven)
 
blueberrylu, I use the same recipe and get many requests also.
It's a good comfort food.

Katy, I'm interested in the way you make it. I purchase few boxed foods anymore and it would be nice to be able to fix this recipe when I don't have cornbread mix, which I buy just for this recipe.
Are the ingredients the same except for the cornbread mix?

um, can i just say why did it take me so long to find this??? oh, that's right 'Mom Stuff'.

That's one of my favorites!!! I sometimes add some chopped dried beef and then have it for our main dish instead of a side.

that looks and sounds major YUMO......Being in the south I sure love just the old fashion cornbread with egg cornmeal and oil in a skillet of bacon grease....slatherd in butter when hot....
