I’m heading to NOLA this weekend and staying a night in a hotel. Two of the friends coming with us aren’t vaccinated and refuse to be; does that mean that restaurants, etc. aren’t accepting a negative test anymore?
Probably. Jefferson Parish may be more leinient. I'll try to keep an ear out.

Anyone 5 years of age and older must provide proof of at least one dose of an approved COVID vaccine or negative antigen or PCR COVID-19 test taken within 72 hours before entry (must include the individual’s name, date of the test, and results clearly visible on an official report), to access:

Natural immunity doesn’t help when the spike proteins mutate, however.
It does because some parts of the immune system recognize the E proteins on the outside of the virus. And some parts recognize the M proteins on the outside of the virus. And some recognize the N proteins that are inside the virus but that infected cells use to attract our T cells to destroy that cell and all the replicating virus in it before that cell can burst and spread the new copies of the virus. It might not be as effective against a much different variant as it would be against the same variant but it would still be a considerable help.

More so than immunity against only the spike.

In an attempt to curb the over use of paper products by bureaucrats and other psudo-scientist, Covid regulations will now be formatted with this new device.

Natural immunity from the virus itself doesn’t last forever. If you were infected at the beginning, your immunity may not be enough to keep you from getting sick with a new one. So vaccination even after the infection gives you a boost.
Maybe it doesn't last a lifetime. It does for many viruses. This has more information (I don't recognize the source - I picked it because it gave the info clearly vs the dense and difficult trade journal sources) http://www.livescience.com/why-lifelong-immunity.html

The last measure I saw was that it was lasting at least 13 months.

I don't have a source, but logic indicates another exposure to covid would boost immunity also.

Even if it doesn't last a lifetime; why can it not be used instead of a covid test as vaccination status is used? We know vaccination doesn't last a lifetime.
