On the subject of stubroness in older patients this is what I have observed.
As we are born, our world opens up from totally dependent to wild adventures in 20-50 years. Then as our world begins to close in because of physical and mental debility, we are less bold, but still trying to exert our old pride and independence of self.
Some keep mental and physical acuity to the end. Some become what I call "plesantly confused". And some just get resistive and stubborn.
Don't let this hide the fact that some facilities, staff and admin. are terrible. Just keep in mind that at best it is a difficult nasty, low pay job and Most are trying.
After a trying game of "Full Contact Medicine" (they often resemble a wrestling match) I smile and tell the always younger nurse or aide "That will be ME in 10 years."
