when you pose any bird during showmanship, pretty much make sure the legs are lined up and fluff out/push up the tail. use your index finger to stroke the neck and keep the head up. basically keep them in a natural, relaxed position. no walking around, pecking the ground, flying off the table and stuff like that. when you're sure they will stay still, take a step back and put your hands behind your back. you can reach forward to adjust the bird as necessary. i assume you're showing through 4-H? What show?
here's a booklet on showmanship from a show i go to at the university of connecticut. it discribes all the things you may need to do during 4-h showmanship. http://web2.uconn.edu/poultry/4-H Poultry/showmanship.pdf
