YOu may actually be able to find a lot of what you're looking for (on controls and egg size with in breeding and all that other stuff) from the scientific studies which are available here online. I know that many of what they do they do inbreed to keep those characteristics around. I personally don't see inbreeding as a huge problem, but ofcourse as you probably know inbreeding too much will dilute the genetics and needs a little mixed up by newcomers

I've crossed father to daughter and son to mother many times so far and have not seen an issue. One thing I have seen is breeding dark range to dark range (also known as black at hatch) the cross of both black at hatch to black at hatch can cause some deformities (which ive seen) no eyes, deformed beak with no eyes etc). Other than that, from my other colors and inbreeding nothing. I don't inbreed all that much but for my tuxedos I have to to some extent to keep the nice patterning im getting around
I'm VERY proud of my tuxedos they just keep getting better and better
I would deffinatly reccomend staying clear of A & Ms for a control group as they are hard to find in true form...and egg laying can be (not always) a disapointment. If it was me I'd start out with pharoahs even though I dont like their skiddishness they are the most wild form you can get

I've noticed a lot of variation lately in my jumbo browns, some are REALLy dark, others are really light (not cinnamon), others have white on their wings which is a new (to me) morph im working on
I just love white on color
I would LOVE for you to deffinatly focus on coturnix and deffiantly if you ever want to discuss genetics i'd love for you to yammer to me anytime you need to! I may not be bale to help but i'd surely love to hear your thoughts and future findings!!!! So please i beg of you deffiantly do your plans!
I reccomend jumbos for egg size and body size
Jumbo Browns or Jumbo goldens though Jumbo Browns are easier to find than golden in jumbo
Longevity they can already live a decient lifetime however hens laying too much can be burnt out and die early as 1 year old to 3 years old...you could deffiantly look into working on a hen laying longer than one year well?
