They ae the only critters I don't bother to rest, they always seem to be tender, no mater if they are fresh or have set awhile in the fridge or I have frozen and thawed them.How long do I have to rest the quail meat between killing and eating?
Processing them trying to figure out if we can eat for dinner.
I'm assuming rigormortis will set in like in chickens?

Was KICKING myself yesterday when I processed 8 of them here. I agreed to sell two packs of four quail to a friend of my ex-husband and my quail were HUGE! Extra jumbo size, four of them packaged up at a pound and a half. So, even at $20 a pack it wasn't worth it to sell them but it was too late to back out. Ah well, never mind, at least they will be enjoyed as much there as here.
Found something odd though, at almost 4 MONTHS of age, there were no sex organs visible at all.
