Crawfish, Boudin, and Cracklin!

That looks pretty good! Gosh, it's times like this, that I really yearn to live somewhere that has such diverse, and interesting food choices. Up here, it's meat 'n taters. Yeah, we have Italian/chinese/etc restaraunts but it's just not the same. *pouts*

I do have to be honest and say, that I can't imagine eating a crawdad...

Several years ago, my mom and I went to a fellow co-workers little backyard bbq...he was a chef, and had some pretty neat stuff. One of the items was the boiled crawdads. Now I can eat crab/crab legs, but I couldn't figure out how to get anything good out of those other things, besides some funny looking yellowish green stuff...that was it for me.
