crawfish/crawdads??

If you want to catch them by the ton, you need some sort of raw meat.

When I was growing up "on the bayou," we used what was locally called "melt." I believe it was technically cow spleen. If you can get your hands on raw cow liver, that would work great too.

No, it's true. I am not from New Mexico. I am from SE Louisiana too. After school me and my chickens should be moving back home soon.

Oh yeah, and as aprophet mentioned, don't forget the salt!! The water you boil in should taste like salt water.

I knew you had to be a local. I'm from Lafourche Parish originally. Catching crawfish when I was a kid was a regular form of entertainment.

X2 regarding the salt. That's vitally important!
 
I do remember one elderly black Cajun lady told my mom to put LOTS of salt in a BIG pot to boil the crawfishes in. Then add all of your goodies in the pot!

I thnk the New Englanders would use the other Spice....Old Bay Seasoning???
 
we purge our by usuing just water we let them soak then change the water and do this for about 3 runs

put water to boil first add at least one box of salt 1 and a half bags of powdered zatarans crab boil and 1 to 2 cups of the liquid zatarans crab boil
add onions and lemons(6) cut in half and potatoes and let boil for about 30 min to get the onions and potatoes cooked all the way

add crawfish let water come back to a complete boil and cook for about 5 min to 8 min turn off burner add cold water what this does is allows the crawfish to soak up all those seasonings real good and let soak for 5 min

if you want sasauge in add as soon as you put crawfish in pot same with corn on the cob


you also gonna want some dip with that

mix mayo and ketchup add a little mustard and worsh shire sauce and maybe a little tony chashires if you like it spicy ...we also add very fine chopped onions to our dip

Usually, they are ravenous for the hot dogs...we don't have any kind of trap...we just put a hotdog on a hook, throw it in and pull it back out. Sometimes there are 4-6 crawfish per pull! And they are always slapping at each other & fighting for the hot dogs! LOL

check ebay you maybe will find crawfish traps if you want to catch a lot quick you will do better buying some of these you can also maybe order from academy sports and outdoors
 
oh yeah the recipe i gave is for a really large boiling pot if usuing your stove you will need lots less seasonings but everything else is the same
 
Crawfish is one of my favorites! But, I buy the ones that are already peeled, since I don't have a place around here to catch my own. I cook mine in butter, garlic and cayenne pepper. We usually have steak with ours.

I don't think they taste anything like crab, but that's just me.
 
Almost any recipe you make with shrimp, you can substitute crawfish tails. I ship frozen ones up to my inlaws in Wisconsin when they come into season every spring. My SIL is allergic to shrimp, but she can eat crawfish because they are freshwater, not saltwater species, so no iodine.
