Cross Continental Friends!!!

I was joking about being an idiot myself and then I was saying how tired I am. I did a lot today.

Oh Yeah I had a blast. I went down to a friend of mine's house and he is teaching me all about goats. Today we fed, captured, wormed and then herded a lot of his goats for quite a few hours. After I went back home my family and I ran a few hours of errands. Spending time with my friend and his goats was way more fun though!

I do spend a lot of time with him. He is a very nice person and I appreciate him a lot. He doesn't make cheese yet. I want to so maybe we will learn it together. He calls me when there are kiddings and soon we will be trimming hooves.

I've done a lot of cheese when i work in the mountains

the recipe is almost the same, using one or more kind of milks

take a part of milk who rest at least 12 hours and an equal part of fresh milk

put it in a big copper pot, burn a wood fire under and mix it continuously, prove the temperature with your elbow, until you feel hot (38 - 39°c), then put a part of rennet for 50 parts of milk, take away from fire and mix very well, then, leave it rest almost 6 hours, not in the fridge

when it's cold and rested, collect your cheese with a spotted spoon and put it in the molds to dry, you can also help with some heavy plug on

when the molds doesn't still anymore, revert carefully and let it rest again, at least four or five times

past 20 days, you can taste the first

Cool. Seems simpler than recipes I have read. I will definitely save yours and when my friend and I decide to make some I will use it! I really think it would be a lot of fun.

I am such a new person that I am so very excited that in a little he will to teach me to milk!

that's not so difficult, if the goat agree

that's harder milk a cow

how many goats he have?

do you can mix it with some cow's or sheep's?

I have never heard of it being mixed but I don't really know.

He has a lot of goats . He has two her sires, around fifteen does and a whole bunch of babies. He has mostly Nubians and a few Saanens.

goat milk is low on fat, and don't produce much cheese, mixed with some greasy one, like sheep's milk, that's more remunerative, but, the cheese become more stronger

goat's only is more sweet and need to be eaten earlier, sometimes' it's usually spiced to give more flavour
