So here is a curious question, I was thinking if I feed my chickens crushed grain in lieu of pelleted grain, would the pieces be small enough that they don't need grit to chew it up?

Unless you grind the grains to a mash/meal you are going to need grit.
Spend the $4.00 and get yourself a bag of all purposes sand so they have grit.
