Hey, if I want to make my regular quiche, just without a crust, how do I prepare the pan? Is cooking spray sufficient, or would butter work, or what? Anyone got an idea?

Yes, just spray.

Quiche usually has a cream ingredient, I don't think a fritatta does.

I am not a fan of crust, so I only make quiche without the crust. Makes easy lunch or breakfast, or dinner.... Gosh I am getting hungry!

you read my mind, I have one in the oven right now. I used chopped ham sauted with onion, then I had one of those microwave sides of broccoli, potatoes and cheddar that I heated up and put in the plate. Mixed 5 eggs with about 3/4 cup canned milk, salt pepper garlic and in it went. OOhhhh....I cant wait.
