I know we're getting off topic here but is that true? I love uncooked broccoli, carrots and sweet peas. Is it bad for me? I always cook the broccoli now that me and the SO live together but I love it uncooked for a snack. Especially fresh from the garden...washed of course
Not bad for you but can be hard if you ate only raw vegetables. You get less nutrients from them.
If you are worried about losing vitamins in water, you can either use the left over water to make bread or roast the veggies with a bit of oil.

risk of foodborne illness, which is often connected to eating raw, leafy greens, especially if they're not properly washed.
