So…

I want to start cooking more and expanding my horizons so to speak LOL

SO!

I figured I would make a thread for this!!!!

Feel free to follow along if you want.

I already have a plan for meal number one LOL

Fajitas!!!!!!

I will thaw out the chicken in the freezer soon and cook it with these (peppers and onions) and maybe some taco seasoning and put it on a Carb Balance tortilla shell and some shredded Mexican cheese. 😍🤤 :drool

Making French toast tonight!!!!!!! Not the healthiest or the fanciest meal but I was craving it for some reason and I have all the ingredients soooooooo….. French toast it is!!!!!! LOL

I MIGHT still make the fajitas later tonight but I am not 100% sure. I might save that for tomorrow night’s dinner. I think the chicken will still be good for one more day out? Since I only took it out yesterday. But yeah. We will see how I feel.

Anyways, my French toast is normally delicious if I do say so myself because of what I put in it so I am hoping this batch turns out just as good!!!!!

I do egg, milk, nutmeg, and cinnamon!!!!!!!!

Since this is a small batch (just me and I can’t eat much anymore LOL), I did just one large egg, a splash of milk, and then just shook the nutmeg and cinnamon on until I felt it was good. I go somewhat heavy on the cinnamon normally but not TOO heavy LOL and this time I went a little lighter than normal. So yeah.

I personally have a sugar free, low calorie syrup right now BUT I normally prefer REAL maple syrup LOL

But that is extremely high in sugar and I’m not supposed to eat it lol

So I say as I’m eating carb loaded French toast on WHITE bread… :lau :oops:

If I really wanted to make it healthier, I should have at least used the honey wheat bread I have… but oh well. LOL

But yeah, that’s that. LOL
