Day 17. Lockdown tomorrow! Couple of questions.

I am on day 17. I have a hovabator 1602 with turner and fan. I have heard of the temp spiking as the chicks are developing. Should that be today? I was outside for three hours. When I went out, the temp was 99.3. Came in. It was 107! I have the dial turned all the way down and the temp won't stay down. I have to take the top off for a few minutes to get the temp down. Is this normal on day 17?

Also, I go into lockdown tomorrow. I have heard of keeping the humidity 50-60% because as the chicks hatch, they will increase humidity. My hatcher is getting ready for tomorrow and is currently at 58%. Is this okay? I have two pans of water and two sponges in there right now.
 
up humidity to 70-75%

As long as the spikes aren't going on for hours, You'll be ok!

If you are supposed to keep the humidity at 70-75%, but you aren't allowed to open the 'bator during lockdown, how do you add more water if the humidity goes down?
 
If you get the humidity up to 70-75, put the plugs in the holes, and don't open the incubator... the humidity won't go down. In fact, when they start hatching you'll see it go up.
 
Okay, I have three sponges and 2 pans of water. Still can't get the humidity above 60%. I won't have room for the eggs if I put anything else in there. What do I do now?
