I'm sorry to here that I was in tears the other day trying everything I know I've spent close to 2000 in 4 days trying to get everything right. I hope it gets better for you.

I have thank you I have literally been reading and learning hours on end everyday now.

Research is wonderful, I'm not knocking it, but the experience is still the best teacher. There is alot of misinformation online, confusing things that are already confusing to begin with. But getting the advice of more experienced folks, in real-time while things are happening is a great tool we have here. You're doing great!
 
Temps and humidity have been a nightmare for me:
I have used those IW Incutherm thermometers and wasn't impressed with their accuracy.
I also had 3 of the Incubator Warehouse Incukit All-in-one thermostat, heater, fan control units. I liked how they operated but each one failed during incubation and killed all the eggs so I won't try them again.

Those IR are great inventions for a variety of tasks like electric and electronics.
We always used them and IR cameras looking for hot spots in high voltage control panels.
However, IMO, they are very pricey and not accurate enough to justify the cost. Other cheaper thermometers are more accurate.

DH bought ours his work, not eggs, but it's fun to see what it reads on the eggs.

Lol I kinda already do see I run my own buisness and never leave so I have turtles snakes iquanas fish chickens ducks and dogs lol.
