Decorative grass (Carl Forester, I think the name is) safe to go in pheasant and coturnix coop?

The grass is still alive, and I just added mint. It looks beautiful!!! The mint smells so nice too. I think I'll go ahead and add a few little raspberry plants, as it seems those are alright?
The coop was built over a small Douglass Fir, and it is doing well, so I think I might add another.
Is Kinnikinnick (also called Bear Berry) safe? It grows naturally here, and the wild turkeys eat the berries. Mostly I'd just want it to have some green through the long winter. Are there any other evergreen plants that are safe for pheasants and quail?
Are all of these safe for doves, too?
 
In one of my two old, outdated pheasant books it talks about hedges of Privet. Now, Privet is toxic to chickens, so it must be toxic to pheasants too, right?
