However, if you have 3 deer, as posted above, "one weighed 115, one 128, one 235, all hanging weight. When we went to pick them up there where 3 boxes with all the same cuts, all the same size.......the butcher said they were all the same," it seems very unlikely that all three would turn out cut the same, and weighing exactly the same. That's 120 lbs. difference between the largest and the smallest. But they weighed the same after processing? There'd be some variation, unless the coincidence was extraordinary. And if it was because the big one was badly mangled, how'd they get all the same cuts? In that case, something's not quite right. The processor appears to be taking great liberties with customers' meat. Mixing it together at the very least, shorting at least some, either adding to it to smaller carcasses, or keeping some for himself. If keeping some is part of the deal, or if meat from different animals will be included, that should be disclosed and agreed upon, up front. Otherwise, it's fraudulent, and possibly a health risk.
You may have observed that the deer you shot was lively and looked alert and healthy, but do you know for sure that some guy down the road didn't shoot one that looked sick? How about knowing how careful Joe Blow was when he field dressed his deer? How long it was in his truck?
I want my own meat back. That's why we dress our own.
