deer processor prices..

I was wondering the same thing. Our neighbor has a guy he goes to when he doesn't want to mess with it, and he charges half the deer. I was thinking that wasn't too bad, since you aren't out any money, but I hate the thought of giving up all that meat! LOL! We did it ourselves this year. It is a lot of work, but you know how the meat was handled and that it is your deer.

i wrap at a processing place for a little extra money before the holiday. the first question everybody asks it "do you really get your deer back????" yes you do, at the place i work. the only time you may not is sausage or jerky. those two things need to be made in certain size batches. 25lb for sausage so if you have 15lb then they need some one with 10. mix the whole thing together. then you get your 15. they raised their price to $75 that is just processing nothing extra. i get $10 for our (husbands) deer. he got a button buck this yr and i said i wasn't paying that much to get it done. i have seen it done enough, i will do it myself. well i did it!!! in fact i have jerky in dehydrator as we speak. only took two hours to cut it up. then i worked on it the next day making burger and packaging. really wasn't that bad by myself. my dh had to help me cape it. btw his buddies can't belive his dw processed his deer for him. (no he didn't help with anything else)
 
around here it is .50 lb. though capping-skinning,jerky, and balogne are all extra. My wirf and I skin it and bone it before processing, but we grind the whole thing up with beef added.

Mixing meat for sausage is what I try to avoid.. that is why we take our meat waaay off season to have sausage made.. the butcher tells us how much he needs for a batch and that is what we take..

as far as the rest of the deer, I personnally could grind the whole thing into hamburger.. we never mix any other meat into it.. I make cowboy beans, chili and sloppy joes

I am always requested to bring the cowboy beans to family picnics.. I never reveal my secret ingredient.. I get such a kick out of it.. my daughters will not eat venison.. LOL if only they knew..
I tell them it is made with venison
but they think I am kidding..

it seemed that $2 a pound was a bit high.. I will call around. I like the idea of freezing it and taking the deer in off season..
 
We paid 7.00 a quarter or 28.00 a deer last year. This year we paid 99.00 for an electric grinder and did it our self. We separated the tenders and froze them and then cubed meat for stew and ground the rest. I throw all the roast in the crock pot so we went ahead and just cubed the roast.

If you process your own deer, why pay later to have somebody make sausage? If you get a meat grinder, there are tons of sausage recipes on the internet.

I made my own pork sausage for the first time recently, to avoid MSG, and to reduce the cost. It turned out pretty darn good, but next time I'll add a bit more fat, I have to add fat to the skillet or it sticks. It cooks up a bit dry if I'm not careful. And so it goes, it may not be perfect the first time, but you'll learn, and can adjust your recipe until you get it the way you like.

We get Boston butt pork roasts on sale a lot, I cut my own pork steaks from them, make ground pork, sausage, and use the irregular leftover pieces (if they don't get ground) either just roasted, with BBQ sauce, or use them when I cook a pot of beans.

Tough cuts of venison make nice burger, or use to make venison stew or chili and pressure can it.

yeah sausage is easy to make and you can buy a hand grinder cheap,in fact the electric grinders are getting cheap now,I wish I would have waited to get mine I bought a torrey several years ago and paid $1200. for it
but it will grind as fast as you can stuff it in there
 
We process our own unless we want something special made. Art charges about $100. per deer. That is for summer sausage, cajun, smoked ham, etc..delicious stuff and well worth the money. He has a list of items that he makes out of deer. We have made our own deer jerky..Good Stuff!!!!
