Delicious quail!

DBF has been gone all week so I wanted to cook something special for tonight. I'd never had quail but he loves them, so:
Four quail, split open and laid out in a glass baking dish. Gave them a generous basting of a hoisin&garlic sauce, baked at 325F until just barely done. I then added another layer of the sauce and took the creme brulee torch and kinda seared the top so they would be crispy and crunchy and awesome.
Served with garlic mashed potatoes and steamed artichokes.

Seriously, the quail were so delicious we are thinking of ordering a batch to fill the freezer.
 
As a loyal Auburn fan, I gotta say the best thing that comes out of Tuscaloosa is I-59, lol. j/k
 
Steve, how did you season them. When I make Buffalo Wings I bake them until done then put them in a butter, hot sauce mix. Then dip in blue cheese or ranch. Is that like what you did? We have a lot of quail. I peeled 50 quail eggs yesterday and it took me 2 hours!!!! They have a tough membrane. Got any tricks for that???

Let your eggs sit in the fridge for about a week before you boil them that makes them easier to peel.

Definitely! Don't ever try to peel fresh quail eggs, it's impossible!! I did that the other day, to make some deviled eggs for the chickenstock. From start to finish, peeling and filling about 60 eggs took me about 4 hours, and I had my 4 y/o to help!! Older eggs peel easier, you can also try putting them in ice water after you boil them, putting salt in the water as they are boiling, or putting vinegar in the water. I did all these, would hate to see what a mess I'd have had if I didn't!!
 
Thanks Steve, I will probably try that this weekend, as we are having some friends over. As for the eggs, I did do a lot of salt while boiling and cold water and they peeled ok. I finally figured out to cut a small whole in the top and peel in a circle. All but 7 peeled with out tearing. I just ate them (the messed up ones). Now my problem is my son wants to eat them like popcorn. I keep telling him they are for special occasions. Next time I'm going to make him help peel!!! Theresa
